:: yummy black bean burgers ::

Our recipe for black bean burgers (adapted from Get Cooking):

3 cups cooked black beans (two 15-oz cans, and make sure they come from BPA free cans!)

2 medium onions

3 cloves garlic

1/2 cup corn

3/4 cups of rice OR barley

2 tsp cumin

1/2 tsp salt

1 large egg

Sautee onion in olive oil.  Mash the beans in a large bowl.  Stir the egg into the mashed beans, then add the rice or barley, and the sauteed onions.  Add all the other ingredients, heat up frying pan.  Cook until lightly browned on each side.  These are delicious on rolls or buns, on top of salad, or alone.  We all love them!
