Yummy treats


We have been loving this recipe for “Buckwheat Krispie Treats”. They are actually more akin to peanut brittle then krispie treats, and as such, we have been calling them Buckwheat Brittle. They are super yummy, and really good for you too. The kids love them!

Buckewheat Brittle!

1 cup raw buckwheat groats
¼ cup plus 1 T peanut butter
¼ cup coconut oil
2 tsp. maple syrup
3 tsp. vanilla extract
½ tsp. sea salt

Lightly toast the buckwheat groats, I used a cast iron skillet for this. Then combine all the other ingredients in a sauce pan over medium-low heat and stir until well combined. Add the buckwheat groats to the sauce pan and pour everything into an 8×8 baking dish. (I greased mine first with some coconut oil.) Place in the freezer for an hour, then cut, and enjoy. (For any left-overs, store in the fridge to best maintain shape.)
